Can you believe next weekend is Christmas?! What. The. Heck. I have a long list of things I need to wrap-up (literally) and I’m hoping by Monday I can say my holiday shopping is done. Wish me luck.
Anyway, as promised, here’s my recipe for pumpkin bread. It’s embarrassingly easy and usually a crowd pleaser.
Pumpkin Bread
1 1/2 cups sugar
1 2/3 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
2 eggs
1/2 cup vegetable oil
1/2 cup water
1 cup pumpkin
3/4 cup chocolate or white chocolate chips
Instructions: Butter and flour pan. Pre-heat oven to 350 degrees. Mix ingredients and pour into loaf pan. Bake for 50-60 minutes for larger loaves (check after 40 minutes, as every oven is different!) and 25 minutes for the mini loaves. Makes two small loaves or 8 mini loaves.
And of course, if you are gifting these to pals this holiday season, here’s how I packaged up my mini loaves…a little cellophane bag, some festive red baker’s twine and a sweet little gift tag.
